This vegan crispy buffalo tofu wrap recipe is bursting with flavor and texture, making it an ideal choice for a high-protein lunch. Not only does this recipe offer a delightful combination of flavors and textures, but it also pairs exceptionally well with additional toppings such as avocado, tomato, and hummus. Additionally, it is an excellent choice for meal prep, ensuring that you have a delicious and nutritious lunch ready to go. The following ingredients are incorporated:
Extra-firm tofu: To achieve the desired texture, it is recommended to use extra-firm tofu. Firm tofu can also be used, but avoid using silken tofu.
Buffalo sauce, which adds a delicious flavor to this recipe.
Vegan butter: To enhance the authentic taste, it is suggested to incorporate a vegan butter spread into the buffalo sauce. Alternatively, coconut oil can be used.
Pulsed oats, which are used for the coating, are used. Simply place the rolled oats in a food processor and pulse until they resemble coarse breadcrumbs.
Avocado oil: Olive oil can also be used as a substitute. Melted coconut oil is not recommended as it causes the bread crumb mixture to become excessively sticky.
Oat milk; however, any unsweetened milk alternative will suffice.
Cornstarch: Although not tested, almond flour is presumed to be a suitable alternative.
Smoked paprika, which is used to impart a more “meat-like” flavor, However, regular paprika can also be used.
Dried oregano, which adds a touch of classic chicken tender flavor to the tofu.
Salt and pepper: season to taste.
Whole wheat wraps: Any type of wrap can be used, including pita bread or naan.
Tips for Making Crispy Baked Buffalo Tofu Wraps:
Properly drain and press the tofu to remove excess moisture, as this will help achieve a crispy texture.
Use one hand for dipping the tofu into the cornstarch and breading mixture, and the other hand for dipping it into oat milk.
Allow the oat milk to drip off the tofu before coating it in breadcrumbs.
Ensure there is enough space between tofu pieces on the baking sheet to prevent sogginess.
Suggestions for toppings:
tomato slices,
Lettuce,
Hummus (red pepper and garlic hummus complement the buffalo sauce best),
Slices of avocado or guacamole,
Vegan ranch dressing,
Roasted veggies like cauliflower or broccoli.
Recipe
The preparation time for this dish is approximately 20 minutes, and the cooking time is around 30 minutes. It is suitable for six servings.
Ingredients
397-gram block extra-firm tofu drained and pressed,
100 grams of rolled oats pulsed into a coarse breadcrumb texture,
2 tablespoons of avocado oil,
½ teaspoon smoked paprika,
1 teaspoon dried oregano,
½ teaspoon salt,
¼ teaspoon black pepper,
6 tablespoons of cornstarch,
79 ml of unsweetened oat milk,
1 tablespoon vegan butter or coconut oil,
203 grams of buffalo sauce,
6 whole wheat wraps,
Toppings of choice.
Instruction
Preheat the oven to 218 degrees Celsius and line a large baking sheet with parchment paper.
Cut the pressed tofu into approximately 24 small rectangles and place them on a plate or bowl.
In a separate shallow bowl, mix together pulsed oats, avocado oil, paprika, oregano, salt, and pepper. Set this mixture aside.
Prepare two more shallow bowls, one with oat milk and the other with cornstarch.
Set up your dipping assembly line in the following order: tofu, cornstarch, milk, bread crumb mixture, and the lined baking sheet.
Start breading the tofu by coating one piece in cornstarch, then dipping it in oat milk, and finally coating it with the bread crumb mixture. Place the coated tofu rectangle on the prepared baking sheet. Repeat this process for the remaining tofu, leaving some space between each piece on the baking sheet.
Bake the tofu for 30 minutes.
While the tofu is baking, melt vegan butter or coconut oil in a small saucepan over medium-low heat. Whisk in the buffalo sauce until well combined. Reduce the heat to low.
Once the tofu is cooked, carefully transfer the baked tofu pieces to a large bowl or food storage container. Pour the buffalo sauce over the tofu and gently toss to coat.
Assemble your wraps with the buffalo-coated tofu and your choice of toppings. Enjoy immediately or store in the fridge for later.
