Roasted chickpeas

This oven-roasted chickpea recipe is delicious, crispy, and incredibly easy to make. Roasted chickpeas are a perfect snack because they are inexpensive, healthy, and versatile. Besides eating roasted chickpeas plain, they are also perfect for tossing in a salad, piling onto a fresh Buddha bowl, and sprinkling over soups or pastas. Chickpeas make these meals more satisfying by providing protein. This recipe contains only a few ingredients, including:
Chickpeas: This recipe calls for two cans of chickpeas, which will be rinsed in a colander, drained, and dried before use.
Olive oil: using good-quality olive oil is recommended.
Seasonings: In this recipe, a blend of ground sumac, a Middle Eastern spice, smoked paprika, garlic powder, salt, and black pepper is used to season the roasted chickpeas. However, you could use a different spice mix.

Tips for making roasted chickpeas:
Make sure the chickpeas are as dry as possible before baking, since moisture is crispy roasted chickpeas’ biggest enemy. After thoroughly rinsing and draining, it is easiest to spread the chickpeas out on a clean kitchen towel and rub them gently to dry them as much as possible. During this process, some of the chickpea skins will fall off, which is completely okay.
If you want to make the crispiest chickpeas, remove the chickpea skins. This can be achieved by continuously rubbing the chickpeas or pinching them between your fingers. However, this step is optional, as the chickpeas will turn out fine with many skins still attached.
It is also recommended to bake the chickpeas on a sheet of parchment paper. This helps to prevent the seasonings from sticking to the baking sheet.
The roasted chickpeas are best eaten within two hours after roasting. They will still be tasty but will decline in crispy texture.

Variations
Due to the flexibility of this recipe, it is possible to customize it to your preferences. Below are a few variations to try:
Different seasonings: for this recipe, all kinds of seasonings can be used, for example, Italian seasoning, everything bagel seasoning, and Za’atar seasoning. Furthermore, a mixture of curry powder, ginger, chili powder, cumin or cinnamon, and sugar can also be used.
Different oil: any nutural-flavored cooking oil works well in this recipe.
Add lemon juice: Add the lemon juice right before serving. When adding it far in advance, it may soften the crispy texture of the chickpeas.

How do you store the roasted chickpeas?
It is important to store the roasted chickpeas in a container that is not airtight so the air can circulate freely. The left-overs can be stored in a large mason jar or bowl, lightly covered with a thin kitchen towel or paper towel. They can be stored for up to three days.

Recipe
The preparation time for this recipe is approximately 5 minutes, and the cooking time is 50 minutes. This recipe yields 4-6 snack-sized servings.

Ingredients:
2 cans of chickpeas,
1 tablespoon olive oil,
1 teaspoon ground cumin,
2 teaspoons smoked paprika,
1 teaspoon garlic powder,
½ teaspoon fine sea salt,
¼ teaspoon black pepper.

Instruction:
Heat the oven to 177 degrees Celsius and line a baking sheet with parchment paper.
Rinse the chickpeas thoroughly, using a colander, until they are no longer surrounded by foam and the water runs clear. Then, drain thoroughly, spread the chickpeas out on a clean towel, and rub the chickpeas with the towel to dry them off as much as possible. Furthermore, discard any skins that fall off while drying.
Transfer the chickpeas to a large mixing bowl. Then, drizzle the chickpeas evenly with the olive oil, then sprinkle on the sumac, smoked paprika, garlic powder, salt, and pepper, and toss gently until evenly coated.
Spread the coated chickpeas out on the prepared baking sheet. Bake for 45 minutes. Shake the pan briefly every 15 minutes, or until the chickpeas feel dry and crispy to the touch. Please note that the chickpeas will continue to crisp up even more as they cool after baking.
After baking, the chickpeas are ready to be served and enjoyed!
